Emmentaler Switzerland is an association of Emmentaler AOP milk producers, cheese–makers and distribution partners and is the official point of contact for any questions regarding Emmentaler AOP. Emmentaler AOP is a hard Swiss cheese which is produced according to strict AOP (Appellation d’Origine Protégée) guidelines laid down by the state in small commercial dairies using fresh milk and no additives. Emmentaler AOP, whose history dates back to the 12th century, is left to mature for at least four months, which gives it its particularly full taste. Only a cheese which bears a small round Swiss cross (the AOP seal of quality) in front of the Emmentaler inscription is a certified original from Switzerland. And only an original Emmentaler AOP can be traced back to its place of production using the number on the rind.
