The restaurant Ecco is renowned for its richly aromatic cuisine. Awarded two Michelin stars, in Ascona as well as in St. Moritz, Switzerland.
Creative pairings and intense nuances reveal a new taste and turn your evening into an unforgettable gourmet adventure. Executive Chef Rolf Fliegauf was already awarded with two Michelin stars for each restaurant, the Ecco in Ascona and the Ecco St. Moritz. In 2015 he will bring his successful culinary concept to Zurich.
Rolf Fliegauf's concept: a high-quality mix of craftsmanship and sophisticated individuality. His future career became clear at an early age. As a child, Rolf Fliegauf enjoyed nothing more than to spend his time in the kitchen of his parents’ restaurant. Today, he is one of Switzerland’s most decorated chefs. His Ecco Ascona and St. Moritz restaurants have both been awarded two stars by the Michelin Guide. With the opening of Atlantis by Giardino, the Swabian chef’s concept is now also represented at the Ecco Zurich restaurant. What sets his cuisine apart? His creations comprise a high-quality mix of craftsmanship and sophisticated individuality. While his food embodies a regional down-to-earth attitude, this is combined with a certain style that appeals to the international masses. Fliegauf resembles a musician at the piano in the way he plays with textures and temperatures. He loves to experiment. As an exponent of haute cuisine, however, he always remains in touch with the principles of popular cuisine. This is something he attaches importance to. A gourmet critic labelled him “one of the greatest chefs of his generation” in Germany’s Welt am Sonntag newspaper.
